  12. @agripundit Very good point on social change, attitudes toward cooking. Nuggets in microwave easy. Hard to cook pork, beef, fish like that.

  16. @Podchef That's right, Neal, meat consumption up though driven by chicken. Red meat per cap. consumption flat to down since early 1900s.

  18. @nycUlla Right, too easy to generalize by breed, many diff'cs within breed, need to find right combo for your growing region, mktg goals.
  19. @WriteNowBiz Have offered steaks from Holstein steers in tastings, lots like it. Haven't seen any 1 farm/butcher combo win landslide tho' :)
  20. @NateJaeger Not meaning to discriminate but to differentiate. Different breeds/diets/regions age @ market taste diff't, let's celebrate it.
