  12. About my time in Denver (87/88). Micheal Smith from Kansas City was my sous chef. In between, he opened Charlie Trotter in Chicago.
  13. Small world: I just got an Email from Hugh Reno one of my cooks at the Chateau Pyrenees in Denver in 1987. He's now Chef for Harrah's.
  14. Cooking Tips: 4 any purees, corn, pea, bean...purée only 1/2 then add the rest whole. U get both silkyness and texture.
